After a much too long hiatus we are back to brew a Scottish Export Ale. All it took was a request to brew for a wedding! So, we are overjoyed to help (in our small way) Kevin and River celebrate the next step in their life adventure!

Brew day proceeded with only a modicum of drama (and a little product lost during transfer to the fermenters). Not bad considering our extended time away from the brew kettle.

Here's hoping that the ale will be central to numerous toasts throughout the evening.

So what is a "Scottish Export Ale"? Per the Beer Judge Certification Program Guidelines:

A Scottish Export is a malt-focused, generally caramelly beer with perhaps a few esters and occasionally a butterscotch aftertaste. Hops only to balance and support the malt. The malt character can range from dry and grainy to rich, toasty, and caramelly.

And here are the grains we selected to reach that profile...

Base Malts (81%)
> Marris Otter - Rich biscuity base; classic UK character
> Munich I - Malty depth, slight toast

Specialty Malts (19%)
> Crystal 110 - Deep caramel, burnt sugar, raisin
> Crystal Light - Bright caramel, honey, biscuit
> Melanoidin - Body, malt intensity, slight umami
> Chocolate Malt - Toasted edge, color boost, subtle roast
> CaraPils - Head retention, foam stability
