We had dreamed of brewing. We had plans to brew. Then it happened... the universe laughed at us. Out of an abundance of caution we had to put it all on Killick. He did not disappoint.

TASTING NOTES

QofT - An abundance of flavor.
SH - It's a robust, seemingly on point representation of the style. The salty, herbaceous notes are strong and forward. Acceptable, perhaps even laudable.
FS - I like it. As Gose VII I find it different from what I expected. First, CO2 pressure was perfect (expected). Satisfying little pssst with minimal effervescent reaction. No threat of surge. The pour was easy with minimal sediment. Good effervescence and color in the glass. First indication of difference: the color was slightly darker than I expected to see -- foreshadowing... First nose: a bit citric. First taste: the malt hit firsts (surprise!); then the citric/salt; then (surprise again!) quickly back to a malt finish. The salt and citrus remained in the background through most of the glass with the malt remaining forward. Then, when I expected there would be nothing left to report, the penultimate sip came up with a hint of banana, The pour started at room temp, so maybe just handling the glass for a while warmed it up just enough to pop some banana out. Not much. But expecting to be done with it by that time, so it was noticeable. I'll second laudable. Looking forward to aging a bit. (…and after reviewing the style guidelines...)
SH - Reading the guidelines, it feels like we are in style.
FS - Agreed, although with VII I got more malt in the finish than acidity. I think the salt is better balanced than in earlier forays. I also think I got the coriander in the nose, but not in the taste. Maybe that's just a good sign of balance. VII is not as carbonated as described. But I'm OK with that. It was nicely effervescent. I think maybe the style should be just slightly tweaked to line up with 'an abundance of caution'.

Conclusion... Gose VII is the model for Gose VIII and future iterations!
